Crockpot Barbecue Recipe (Perfect for Derby Day!)

Crockpot Potato Soup Recipe (Cheesy & EASY!)

Jamie here!  I love potato soup and I love using my crockpot – which is why this Crockpot Potato Soup recipe is in such heavy rotation at my house all winter.  Not that anyone’s complaining!  It’s loaded with flavor (and cheese) – so the kids love it.  But it’s also loaded with secret veggies, which I love (a whole bag of shredded carrots goes completely unnoticed by my picky eaters).

Now I’ve posted this Easy Cheesy potato soup recipe before with a crockpot version tacked on as an afterthought.  I thought I’d highlight the Crockpot Potato soup version all on it’s own since it seems to be more sought after. :)

Easy Cheesy Potato Soup Recipe! (And Slow-Cooker Version)

I don’t know about you guys, but around Tennessee lately it’s been REALLY cold.  The kind of cold that makes you want to fill your tummy with something warm… something cheesy… something loaded with delicious carbs…  Well this is it!

I wanted to repost my favorite cheesy potato soup recipe – but also I’d like add that I made it recently in the my crockpot and it was DELICIOUS!  So here’s the original recipe – and the new update for the slowcooker is under that.

Easy Cheesy Potato Soup

This simple but amazing easy cheesy potato soup recipe made enough to feed my family of 6 two bowls each, with leftovers for lunch tomorrow!  My family told me it was the BEST soup I’d ever made – which I will chalk up to the fact that Velveeta was present. (Credit where credit is due)

The recipe below is the most basic – but I’ve added some optional extras you can use to make it even BETTER.  (Like shredded carrots to give it a little vitamin kick)

Crockpot Potato Soup Recipe (Cheesy and EASY!)

Crockpot Potato Soup Recipe (Cheesy and EASY!)

Ingredients

  • 32 oz Frozen Hashbrown Potatoes (OR 4 LARGE baking potatoes, cubed)
  • 4 Cups Chicken Broth (You can use Chicken boullion)
  • 8 oz Velveeta, Cubed
  • 1/2 Onion, Diced
  • 1/2 tsp minced Garlic
  • 1 Can Cream of Chicken
  • 1 Can Cream of Mushroom or Celery
  • 1 1/2 Cups Milk
  • 3 - 5 Shredded Carrots
  • Optional: Pepper
  • Toppings: Shredded Cheese, Bacon bits, Sour Cream, Ritz Crackers

Instructions

  1. Place all solid ingredients in the crock pot
  2. Pour milk and cream soups over top
  3. Cook on high 4 hours, or low for 6-8 hours,
  4. To serve – Top with shredded cheese, bacon bits, and sour cream if you like. Serve with Ritz crackers for extra crunch :)

For the crock-pot version I made – just dump all the solid ingredients, including boullion cubes, into your crockpot.  Pour in the water and the cream soups, and set it on High for 4 Hours, or Low for 6-8. SO EASY!!

Things I would change about the crock-pot version:

1) I put my Velveeta in at the beginning, but I almost think it would’ve been wiser to melt it in the microwave and add it at the end (It stuck to the sides of the crockpot a little)

2) I would take out the stupid celery.  I hate celery.  I don’t know why I added it.  I think I was in chicken noodle soup mode when I had that brainstorm.  UGH!  Anyway – it does make the picture look prettier :)

Crockpot Chicken with Homemade BBQ Sauce Inspired by The Chew

I absolutely love BBQ sauce, especially my family’s homemade recipe.  One of my favorite summertime recipes is grilled chicken hot off the grill slathered in BBQ sauce. Truthfully, I prefer twice as much sauce as chicken as you might have noticed in the image above. Recently, after watching an episode of ABC’s The Chew about BBQ chicken (see clip below) I really wanted BBQ chicken for dinner. However, I knew the next day we had already planned a full day out to the Chattanooga Duck Tour, and then Coolidge Park. So, I improvised and decided to use the crockpot instead.

I didn’t want ordinary crockpot BBQ chicken! This episode totally inspired me to make my family’s homemade BBQ sauce. Not only is the BBQ sauce amazing, the smell brought back so many wonderful memories of my daddy. I remember standing by his side so many times while he was cooking on the grill, or stirring a big pot of homemade BBQ sauce. I’ve included my family’s secret (or now not so secret) recipe below. It was so nice after a fun day out with the kiddos to have dinner almost ready when we walked in the door.

Crockpot BBQ Chicken with Homemade BBQ Sauce

Crockpot BBQ Chicken with Homemade BBQ Sauce

Ingredients

  • 2 cups ketchup
  • 3 tablespoons yellow mustard
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 3/4 cup water
  • 2-3 tablespoons Worcestershire
  • 1 1/2 teaspoon chili powder
  • 1 cup vinegar
  • 1 1/2 teaspoon pepper (or less to taste)
  • dash garlic powder
  • 1 tsp hot sauce (optional)
  • 1 med onion chopped (optional)
  • Ingredients for Crockpot BBQ Chicken
  • 4 boneless skinless chicken breast

Instructions

  1. Mix mustard and ketchup thoroughly in saucepan.
  2. Add sugar, spices, and chopped onion. Place over heat and bring to a boil.
  3. Add remaining ingredients, and place lid on pot (but leave ajar).
  4. Reduce heat to very low and simmer til thick as desired. Approx 30 minutes
  5. Crockpot BBQ Chicken
  6. Place boneless skinless chicken breast in crockpot.
  7. Cover with 1/2 cup homemade BBQ sauce.
  8. Cook on low for 6 hours.
  9. Add additional 1/2 cup of sauce during last 30 minutes of cooking.
  10. Remove and serve. If desired, cover with BBQ sauce. Can also shred chicken.
