As we’ve shared before, both my family and Jamie’s love Mexican food.  Mexican Rice is one of my favorite side dishes, as long as it’s moist and flavorful.  Recently, I started making packaged Mexican Rice with Chicken Broth and loved the results.  Sounds almost too simple to be true, but I can assure you it’s not!  Just replace water with Chicken Broth and you’ve got yourself a fast and easy side dish.

Mexican Rice:  Spruce Up Packaged Rice for a Fast & Easy Side Dish!  (Working On)

Ingredients

  • Knorr Fiesta Sides Taco Rice
  • Chicken Broth
  • 1 tsp butter
  • Salt & Pepper

Instructions

  1. Follow cooking directions on package, but replace water with 2 cups of chicken broth. Add 1 tsp of butter and salt and pepper to taste.

Homemade Easy Cinnamon Rolls! YUMMY!

A couple of months ago I posted about how my family celebrated Father’s Day.  We have always had a tradition of having donuts on special holiday’s for breakfast.  This year, I thought I would try making homemade cinnamon rolls. To say they went over well is a gross understantement.  I especially loved that I could make it the night before and pop in the oven in the morning.  I saw the recipe online at Kevin & Amanda, however I made a couple of adaptions.

Ingredients for Cinnamon Rolls

Gather the ingredients below:

  • 2 Cans Crescent Rolls
  • 1/2 Cup White Sugar
  • 1/4 Cup Cinnamon
  • 1/4 cup raisins and/or nuts optional
  • 1 Stick Butter Softened
  • 1/4 Cup Brown Sugar

Cinnamon Rolls

Lightly flour countertops.

Unroll crescent rolls.  I happened to find the sheets of crescent roll dough on sale.  If you use regular crescent roll dough, make sure to unroll dough carefully and pinch seams together to form a large rectangle.

Slather 1/2 stick room temperature butter all over dough.  Kinda like you are icing a cake.  (Yep, I got a little excited and started adding the cinnamon before I took a picture.  Busted.)

Mix together 1/2 cup regular sugar and 1/4 cup cinnamon.

 Sprinkle generously all over buttered dough.

My kiddos and I love, love, love raisons.  If you don’t then skip this step.  Totally optional, you can add nuts too.

Carefully roll the dough.

As you roll make sure to tuck in the layer underneath to keep the roll tight.

Pat the ends in, to even out the dough.

Using a serrated bread knife, carefully cut into 8 pieces.  (If you don’t have a bread knife any knife will do just be careful not to smush the dough when you slice it.)

Wrap up in wax or parchment paper.  If you don’t have any you could cover with plastic wrap.

Place in fridge overnight.

Mix together the other half of the stick of butter melted and 1/4 cup brown sugar.  Then pour in bottom of cast iron skillet or baking pan.  Sooooo not healthy but ooooohhhh so good.  It’s okay to splurge every now and then right?

Doesn’t every southern girl have a cast iron skillet?  These were my grandmothers, sweet memories of cooking in the kitchen with her flood my mind every time I use them.

Can hardly wait!  Bake in a 350 degree preheated oven for 20 minutes.

Sweet Vanilla Glaze

Combine 2 cups powdered sugar, 4 tablespoons milk, 2 tablespoons of melted butter and 1 1/2 teaspoons vanilla.

Top with sweet vanilla glaze while still hot.

These are the BEST cinnamon rolls I’ve ever had.  Although we’ve been on a quest to eat healthier and exercise, on special occasions we’re still gonna eat oooey gooey cinnamon rolls.   I’m okay with that.

Ingredients

  • ¼ cup raisins and/or nuts optional

  • Vanilla glaze
  • 2 cups powdered sugar
  • 4 tablespoons milk
  • 2 tablespoons of melted butter
  • 1½ teaspoons vanilla.

Instructions
  1. Lightly flour countertops.

  3. Pinch seams together to form a large rectangle.
  4. Slather ½ stick room temperature butter all over dough.
  5. Mix together ½ cup white sugar and ¼ cup cinnamon.
  6. Sprinkle sugar/cinnamon mixture generously all over buttered dough.
  7. Add raisins and/or nuts. (optional)
  8. Carefully roll the dough into a log.
  9. Using a serrated bread knife, carefully cut into 8 pieces.
  10. Wrap in wax or parchment paper. If you don’t have any you could cover with plastic wrap.
  11. Place in fridge overnight
  12. Mix together the other half of the stick of butter melted and ¼ cup brown sugar. Then pour in bottom of cast iron skillet or baking pan.
  13. Bake at 350 degrees for 20 minutes.

High Value Printable Coupon & Recipe Idea

On Thursday Jamie posted about a new printable coupon for $1 off Philadelphia Cooking Creme.  Since it’s a high value coupon I was surprised to see that it hadn’t hit it’s print limit yet. (Click here to print before it’s gone). It sounded really yummy but I wasn’t really sure what to do with it.  So, I searched online recipes and found Tex-Mex Beef & Rice Casserole from the Real Women of Philadelphia.  There are lots of other recipes to choose from HERE if you’d like to try something else.

Tex-Mex Beef & Rice Casserole

Ingredients:

1 lb. extra-lean ground beef
1 can (14 oz.) fire-roasted diced tomatoes, undrained
1 can (11 oz.) corn with red and green bell peppers, undrained
1/2 cup chopped onions
1 tub (10 oz. ) PHILADELPHIA Santa Fe Blend Cooking Creme, divided PRINT HERE
3 cups cooked long-grain white rice
1 cup KRAFT Shredded Colby & Monterey Jack Cheeses, divided
1 cup crushed tortilla chips
3 Tbsp. chopped fresh cilantro (optional)

Directions:

1. Preheat oven to 350ºF.

2. Brown meat in large nonstick skillet; drain. Return to skillet. Add tomatoes, corn, onions and 3/4 cup cooking creme; mix well.

3. Combine rice and 1/2 cup shredded cheese in 13×9-inch baking dish sprayed with cooking spray; spread to cover bottom of dish. Top with layers of meat mixture, remaining cooking creme and remaining shredded cheese; cover.

4. Bake 30 min. or until heated through. Top with crushed chips and cilantro.

8 servings, about 1-2/3 cups each
