Kasey here, as we continue on our journey of healthy eating I am always trying to come up with new recipes that my family will love. Last night, I made Apricot Chicken with broccoli and asparagus and it was amazing!! This recipe was inspired by Olive Garden’s Venetian Apricot Chicken, however I have made several adjustments to the recipe to make it easier to prepare.

Since changing the kinds of foods that we eat last year, homemade microwave popcorn has become a favorite snack at our house. I never realized how the amount of additives added to foods that I previously thought were healthy like microwave popcorn. After an afternoon of testing out different ways to make homemade popcorn I came up with a Kettle and Cinnamon Pop Corn recipe that my little ones absolutely loved. My husband’s office is less than a mile from our house so he usually comes home for lunch everyday. We’ve been really busy in the evenings so sometimes I cook at lunch instead of dinner. A couple of weeks ago, I made this amazing spaghetti chock full of fresh veggies I didn’t want to go bad. My son HATES squash, I mean absolutely HATES it. However, when I made this spaghetti he had no idea he was eating squash. In fact, my kids are so used to veggies I don’t think they noticed all the veggies in their spaghetti. If your kids are picky you may want to chop the veggies finely in a food processor or chopper first. Otherwise, they will never know and you can feel good about feeding them a healthy meal. My friend Lara passed along this yummy protein packed snack recipe. Muscle Truffles are a perfect combination of yummy goodness! Full of protein, they keep me full for a long time and satisfy my sweet tooth. When I get hungry in the afternoon, I eat one muscle truffle with a banana or berries for a perfect snack. You could vary different kinds of nuts to best suit your taste, or substitute Wow Butter and omit almonds to make them nut free.
If you are doing the AdvoCare 24-Day Challenge you’ll want to wait until after the cleanse and omit the chocolate chips.
- 2 scoops AdvoCare Chocolate Muscle Gain chocolate muscle gain
- 1 cup natural peanut butter
- 1 cup rolled oats
- 1 cup honey (organic or local honey is best)
- 1/2 cup ground or finely chopped almonds
- 1/2 cup chocolate chips (optional)
- *can also make nut free by substituting wow butter and omitting almonds
- Combine all ingredients.
- Roll into balls, then chill.
