St. Patrick’s Day Cupcakes
The kids and I made these St. Patrick’s Day cupcakes this year – and they turned out so cute I had to share! The best part about these shamrock & rainbow St. patrick’s Day cupcakes was how easy they were to put together – I was able to let the kids totally take over this decorating job.
I started with a regular cake mix and frosted with light green buttercream frosting. You can also use canned vanilla frosting and add a few drops of green food coloring.
For the rainbows, all you’ll need is a pack of Airheads Xtreme Sour Belts candy and some mini marshmallows. Cut each belt into 3 pieces and push the ends into the frosting. Place a mini-marshmallow at each end.
For the four-leaf clovers/shamrocks, we used our leftover green Christmas M&M’s (we already used the red ones on Valentine’s Day!) For the clover stem, I used scissors to cute the green stripe from the Airheads Xtreme belt, and then snipped it into smaller lengths.
While we loved making (and eating!) these St. Patrick’s Day cupcakes – the kids still want to make our traditional St. Patrick’s Day Cake when they get home from school today
