How to Make a LEGO Cake

How to Make an EASY LEGO Cake

Jamie here!  Having four boys means I make a lot of birthday cakes that revolve around super-heros, Star Wars, dinosaurs and LEGO’s.  If you’re looking to do a themed birthday cake but are looking for something SUPER-easy, a LEGO cake is your new best-friend :)  You can probably guess how to make a LEGO cake just by looking at the picture, but there are a just  a couple tips you might want to know going in.

This is basically a rectangular cake, with 6 cupcakes on top (that have been sawed in half to make them shorter).  Frost the whole thing over in your kiddo’s favorite color and it’s party time!  I especially like that it’s easy to coordinate with primary colors – my colorful banner and napkins were random clearance finds that were just waiting to be used.

What you’ll need:

To make this cake, all you need are two boxed cake mixes, an 11 x 13 cake pan and a cupcake pan. For the frosting, if you’re going to make buttercream frosting, you’ll want food color, butter, powdered sugar, vanilla and a dash of milk.   Although a set of Wilton cake decorating tips are certainly handy (and solve the problem of spreading crumbs around) – they’re not strictly necessary for this.

Directions:

Make the large cake and the cupcakes according to the directions on the box.  Let them all cool completely before assembling – in fact, you’ll want to stick your six cupcakes in the freezer for a good hour or so.  When you take them out they’ll be much easier to slice with a knife – otherwise they’d probably just squish while you were sawing away.

Once you’ve cut off the cupcake tops, you’ll have six circular stumps – these will be your LEGO “studs”.  Using a little dollop of frosting as glue – place them on top of the rectangular cake so that they resemble a real LEGO.

Mix up a batch of frosting and add food color – I recommend gel food color for a really vivid tint.  I try to pinch pennies anywhere I can, but you just can’t beat the color you get from gel.  Trying to drop more and more liquid food color into your icing to achieve the same color just ruins the consistency of the frosting.

Using a piping bag (or a gallon-size freezer bag with the corner snipped off, if you don’t have an icing bag), go with one of the star-shaped decorating tips.  It won’t leave a nice smooth finish, but it’s sure fast and easy.  (If you want a truly smooth and shiny finish, you’d probably have to learn how to do fondant – and even I’m not that brave yet!)

For the sides of the cake, simply smooth frosting on with a knife.  I also smoothed the sides of the “studs” so they’d stand out a little more from the cake.

*Easy Buttercream Icing

  • 1 lb confectioner’s sugar
  • 1 stick butter or margarine
  • 1 tsp. vanilla
  • 3-5  tbsp. of milk
