Homemade taco meat with baked chips

Kasey here, my family absolutely loves Mexican food. Since we have made changes in our diet to a healthy eating lifestyle I have learned to adjust some of our favorite family recipes to a healthier version. Instead of using the standard taco seasoning packets, I use a combination of several seasonings along with fresh veggies for this homemade taco meat. Then, I bake whole wheat tortilla chips in the oven to go along with our meal. To make sure we are getting lots of veggies in I add a side of “fiesta” green beans. For years, my son has said that he doesn’t like green beans. He eats them, but he’s never happy about it. One night, I told him we were having “fiesta” green beans for dinner and everything changed. As long as I’m making “fiesta” green beans, not just plain green beans, then he is a happy camper. So, if you have a little one that is picky try adding a fun name to a veggie before serving next time. You never know, it could change everything!

    Homemade Taco Meat
  • 1 lb lean ground beef
  • 1 small onion, finely chopped
  • 1 green pepper, finely chopped
  • 2 tomatoes, finely chopped
  • 1/2 cup salsa
  • 1/2 cup water
  • 1 TBSP chili powder
  • 1 1/4 tsp ground cumin
  • 1/2 tsp minced garlic
  • 1/2 tsp paprika
  • 1/4 tsp onion powder
  • 1/8 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano
  • 3/4 tsp sea salt
  • 3/4 tsp black pepper
  • Baked Whole Wheat Tortilla Chips
  • 1 package Whole Wheat Tortillas
  • Cooking Spray
  • Sea Salt


    Homemade Taco Meat
  1. Combine ground beef, and veggies in pan and brown on medium heat, stirring occasionally.
  2. Drain, then return to pan.
  3. Add remaining ingredients, cook on low heat uncovered for 20 minutes or until liquid is absorbed.
  4. Serve in lettuce wraps or on whole wheat tortillas chips.
  5. Baked Whole Wheat Tortilla Chips
  6. Preheat oven to 400 degrees.
  7. Using a pizza cutter, divide the tortillas into triangles.
  8. Spray tortilla triangles with cooking spray, turn over, and spray other side.
  9. Sprinkle sea salt on top.
  10. Bake until crispy, turning once the tops begins to crisp.
  11. If desired sprinkle with sea salt before serving.
