I’ve been posting this week about our 24-day healthy eating challenge.   It’s been an eye-opening experience for sure, I would have told you that I rarely snacked.  However, since during the challenge we are only eating certain kinds of foods I quickly realized how often I would walk through the kitchen and grab a cracker or two or a couple of chips while cooking a meal.  I also didn’t realize how many foods that I ate were processed, or the amount of additives added to foods that I previously thought were healthy like microwave popcorn.

I remembered having heard that you could make homemade microwave popcorn so I started researching online and found that most of the Kettle Corn recipes included oil.  Since we are trying to eat as healthy as possible right now, I wanted to find a recipe that didn’t include any.  Hence, Friday afternoon turned into a big experiment in homemade popcorn.  Needless to say, my little taste testers were happy to oblige.  We have a new favorite snack at our house.  My little taste testers tore up every bag of Kettle and Cinnamon Popcorn I made!  I’ve included the recipe below for plain popcorn as well as the Kettle and Cinnamon.  There are so many ways you can change this recipe up!  I’d love to hear your ideas!

Homemade Microwave Popcorn

Homemade Microwave Popcorn

This all natural low fat, low calorie popcorn is perfect for a quick snack during the AdvoCare 24-Day Challenge!

Ingredients

  • Popcorn Kernels
  • Brown Paper Bags
  • Sea Salt
  • Nonfat Spray Butter
  • Optional Ingredients for Kettle and /or Cinnamon Popcorn:
  • Splenda
  • Pam Olive Oil Cooking Spray
  • Cinnamon
  • Sea Salt

Instructions

  1. Place 1/4 cup kernels in a brown paper bag, fold down once and tape down.
  2. Place in microwave for 2-3 minutes, remove when popping slows to 5 seconds between pops.
  3. Season with spray butter and salt.

Notes

To make Kettle Popcorn:

Spray kernels with Pam until coated. Add 1 tablespoon Splenda and 1/2 teaspoon salt to kernels. Stir or shake well to coat (I used a small bowl with a lid). Pour kernels in brown paper bag, fold down once and tape. Place in microwave for 2-3 minutes, remove when popping slows to 5 seconds between pops. Shake well in bag before opening.

To Make Cinnamon Popcorn:

Spray kernels with Pam until coated. Add 1 teaspoon Splend, 1/2 teaspoon cinnamon and 1/2 teaspoon salt to kernels. Stir or shake well to coat (I used a small bowl with a lid).
