Chicken Fajitas

My family loves chicken fajitas!  We usually eat out at our favorite Mexican Restaurant at least once a week.  Lately, we have been trying to eat at home more, so I made up this recipe for homemade Chicken Fajitas.  They turned out sooooo good!!  I’ve included a photo tutorial below.  I hope your family enjoys this recipe as much as mine did!

Dump red onion and green pepper in a preheated Hot Skillet with 1/2 TB Olive Oil.

Add 1 TB Chili Powder.

Add 1TB Minced Garlic.

Pour in 1 cup Chicken Broth.

Measure 1/4 cup of Salsa and add to Veggie Mixture.  I used mild, but you can use medium or hot, depending on how spicy you like your fajitas.  We actually made homemade salsa, another recipe to watch for that we’ll be posting.

I prefer my veggies to cook all the way through.  If you like yours crunchy add chicken as soon as veggies reach desired texture.

My new favorite cheese to use with Mexican foods is White Sharp Cheddar!  I’ve got a great Mexican Rice recipe I’ll be posting later.  It’s super easy, and uses a boxed mix as a base.

My family LOVED these Blue Corn & Flaxseed Blend Tortillas!  Just thought I’d add that in.

Add lettuce and cheese – yummy these are so good!  I so wish I was having Chicken Fajitas for Dinner tonight!!

I made mine into a Chicken Fajita salad by crumbling the tortilla, adding Mexican rice, the chicken fajita mixture then lettuce and cheese on top.  Scrumptious!!

Chicken Fajitas

Ingredients

  • 1 Large Red Onion
  • 2 Green Peppers
  • 3 Boneless Skinless Chicken Breasts Grilled and Sliced
  • 1/4 Cup Salsa
  • 1 TB Chili Powder
  • 1 TB Minced Garlic
  • 1/2 Cup Chicken Broth
  • 1/2 TB Olive Oil

Instructions

  1. Prepare boneless skinless chicken breasts on the grill - or saute in a frying pan. Slice and set aside.
  2. Chop onion and peppers into slices.
  3. Heat 1/2 TB Olive Oil in heavy skillet on medium heat. (I used a cast iron skillet)
  4. Add sliced onions and peppers, stir well to coat lightly in the olive oil.
  5. Add 1 TB chili powder, 1 TB minced garlic, 1/4 Cup salsa & 1/2 cup chicken broth.
  6. Stir well to combine ingredients, then saute until veggies reach desired tenderness.
  7. Add in grilled sliced chicken breasts. Turn stove to low, and simmer mixture for 5 minutes stirring often to avoid sticking.
  8. Serve warm on tortillas. Top with lettuce and cheese.
