Kentucky Derby Pie is a beautiful beast of a pie.  Simply put, it’s pecan pie with chocolate chips. But that is not what your mouth will tell you. Your mouth will tell you “OHMYGAH- thank you for this chocolatey, nutty, gooey, flaky, beast!”  It’s just so darn good your mouth will probably need another piece or two to do it justice.  You’d best bake a double batch…. Carrot Cake Blondies Recipe

You guys…. Fall is almost HEEERE!  Yesterday Kasey posted this totally amazing-looking Loaded Pumpkin Blondies - which reminded me about this older recipe for carrot cake blondies that are also perfectly suited for Fall!
Here’s an uncommonly easy recipe for Carrot Cake Blondies that will take you 10 minutes of prep time and half an hour in the oven.  So you’ve got about 40 minutes until you can stuff these in your face with a glass of milk.
You’ll need a boxed carrot cake mix, any kind should do, and a couple eggs and butter.  If you have that, you’re ready to roll on basic blondies.
Now, I added in a White Chocolate Chips to balance out the word carrot – but my scant 1/2 cup wasn’t really enough.  Go with a full cup if you know what’s good for you.   Not done tampering, I also added a couple tablespoons of applesauce to my recipe to see if they would turn out a bit more moist – but I found that it didn’t affect the finished product in a noticeable way.  Still – if you have applesauce to hand, might as well go ahead and toss in a little.  That way you can say that this counts as eating your vegetables AND fruits. ;)
Put the eggs, melted butter, applesauce and cake mix in a bowl and  blend it all together with a hand mixer until it’s a thick pasty consistency.  Then hand-stir in the white chocolate chips.


Here’s what it looks like after you squish it down in the pan and spread it evenly with the back of your spoon….

And here’s what it looks like when you sit down with a glass of milk and call all the kids in for a yummy treat, just because you are the best mom ever.

These went over so well, I’m thinking I’ll make them for Easter as well, except I’ll probably put cute little icing carrots on top.  :)  Let us know how they turn out for you!

Carrot Cake Blondies Recipe


  • 1 Boxed Carrot Cake Mix
  • 2 Large Eggs
  • 5 Tablespoons of Melted Butter (that's just a spoonful more than 1/2 stick)
  • 1 Cup White Chocolate Chips
  • 3 Tablespoons of Applesauce
  • Extra white chocolate chips for topping (optional)


  1. Preheat oven to 350.  
  2. Spray a 9 x 13" glass baking dish or cake pan with cooking spray.  
  3. In a mixing bowl, blend cake mix, eggs, melted butter and applesauce on medium until fully incorporated.  
  4. Stir in white chocolate chips and spread into greased pan.  
  5. Bake for 25 - 30 minutes, or until a toothpick comes out clean.  
  6. Melt 1/4 cup of white chocolate and a 1/4 tsp of shortening in the microwave for 20 seconds, stir until smooth.  
  7. Drizzle across the blondies and let cool on a baking rack for 30 minutes.
