How to make a St. Patrick’s Day Cake + Foods you can turn GREEN!

A Wee bit about St. Patrick: You probably know that Patrick used the Shamrock to teach about the Trinity, but there’s more to his story!  He was captured in his early teens and taken to Ireland as a slave (the main religions being Druidism and Paganism).  After he finally escaped to Scotland at age 20, he became a priest and later returned to Ireland to bring the Gospel message.  He spent 40 years converting town after town and working miracles.  The legend of St. Patrick driving the snakes from Ireland likely refers to driving out various Pagan beliefs.

When the boys were still little, I began a new St. Patrick’s Day tradition to add to our usual fare of green egg sandwiches and applejuice.  It’s not easy to get your kids excited about Catholic saints and the wonderful folklore surrounding them – I am, after all, competing with the likes of Batman, Bionicles, and an entire galaxy of Jedi Knights. To bring some excitement to  the story of St. Patrick driving the snakes out of Ireland, I baked a cake.


Here we have St. Patrick (played by Woody of Toy Story), complete with cottonball beard, brandishing the Twix staff of Christianity to send the gummy worms fleeing to the sea.  My husband is already getting very excited about St. Patrick - it’s working!!

How to Make a ‘St. Patrick-Driving-The-Snakes-Out-of-Ireland’ Cake:

  1. Find a medium-sized action figure to serve as Patrick. This Woody doll was too big, but an amputation here and there fixed that right up. The next year we used one of Matt’s old G.I. Joe’s. Any figure with moveable arms and a guy face will do.
  2. Ice the top half of the cake green (Ireland, of course) – and the bottom half blue (the Sea!)
  3. Use gummi worms for the snakes, and staff-shape candy for …well, the staff. (Twix is great – because you have a good excuse to eat the other one)  For detail work, you can slice up a couple leftover gummi worms (the cross emblem on his hat and staff)
  4. Going off a picture (Try this one HERE), try to pipe green icing in the basic shape of robes. I let my kids help – which means he’s sporting a sort of floaty muu-muu.  Add the hat, ocean, etc….

Here is another one of our cakes, this time G.I. Joe lends an air of intensity to the snake mission.  However your cake turns out, it gives you something fun to make with the kids on St. Patty’s Day!

Peanut Butter Fudge Icing (EASY & YUMMYLICIOUS!)

I’m going to let you in on a little secret….  although I LOVE to make crazy-complicated birthday cakes, and I pride myself in topping them with homemade buttercream icing that I’ve whipped into a rainbow of colors – I totally take the shortcut when I’m just not in the mood.

I’m not in the mood a lot of the time, actually.

But just because I don’t feel like making homemade icing every time, doesn’t mean I don’t add my special mom touch to the storebought can.  One of my kids favorite cupcake toppers is what we call “Peanut Butter Fudge Icing”.  I LOOOOVE peanut butter fudge – I could eat a whole pan in an evening and tell myself I was just protein-loading, for all that bodybuilding I do. (hehe)

Here’s how to bring the fattening joy of peanut-butter fudge to the already-fattening joy of a cupcake:

Take a can of vanilla icing and mix in 4-6 BIG tablespoons of peanut butter (you’ll just have to taste as you go here, to see when it gets to your desired peanut-butteriness) – VOILA!  Peanut butter fudge icing!

I think it tastes extra “fudgey” if you use the chunky peanut butter – it’s a little drier and thicker that way.

P B & J Icing?

Another cool take on this would be to make PB&J Icing.  I haven’t tried this, but I bet if you iced your cupcakes with peanut butter fudge icing, and then put a small plop of jelly in the middle, and then swirled it into the icing with the tip of a knife or toothpick – you’d end up with a cool treat!

Valentine’s Day: DIY Tutorial Crafty Fun Handprint Tree

Has anyone else gotten sucked into Pinterest? I see so many DIY décor ideas for my home and crafts that my kids would love I could get lost for hours. We’ve asked our friend Tori Vest, self-professed Pinterest-lover, to help us out. She’s a super savvy crafting girl, we think she did a fabulous job on this DIY project!

Scrumdilly-do, that would be super fun to do with the kiddos.  She simplified it just a bit from the original.  I love this idea, I think it’s so cute.  I think I may go to Hobby Lobby tomorrow and buy wrapped canvas.  I want to start adding Morgan and Caleb’s artwork to their playroom.

 

You will need:

  • Pink paint
  • Red paint
  • Brown paint
  • Paint brush

Step 1: Use the paintbrush to paint the trunk first.

Step 2: Dip your thumbs in the paint, and use 2 thumb prints to create the shape of a heart. Repeat this step until you have enough “leaves” on the tree!

 

 

Depending on the ages of your children, your “leaves” could be all different sizes.  Even better mom, roll up your sleeves stick your fingers in the paint and add some big heart “leaves”.  You’ll enjoy creating a masterpiece of memories with your little ones.

10 Creative Uses for Coffee Filters!

Being frugal oftentimes means being creative – making do with less, and making it into more!  I’ve often told my husband that if I could get a gold medal for only one thing – it would probably be the ability to “Make Do”.   When something I want/need just isn’t on hand – or isn’t within my budget – I can usually look around and find something and “make it work”.  (Case in point – the Tinfoil Heart Pancake Molds I showed you a couple weeks ago.)

This time, I’d like to show you one of my favorite make-do items ever – the humble Coffee Filter.  This has come in handy so many times for me – here is a list of 8 things you can use coffee-filters for.

1.) Popcorn or Snack Bowl  When my kids are asking for popcorn for a movie – I look at my overflowing sink and think “Do I really want to wash bowls right now?”

No – I assure myself – I certainly do not.  Hence was born the coffee-filter popcorn holder.  (I suggest a double layer to help maintain the bowl shape)  Coffee-filter snack bowls are great for kids sleepovers, after school homework snacks, and tons of other little occasions!

2.) Waffle Sleeve. Some mornings when we find ourselves rushing to school due to unheard alarms – I’ll toast frozen waffles or pancakes, slather peanut butter between them – and take them on the road for quick filling kids’ breakfast.  Coffee filters are great peanut-butter waffle sleeves!

3.) Grease Drainer.  Being a procastinator, I run out of paper towels more than you would think.  Today I was cooking sausage & biscuits and when I had nothing to drain my patties on – who did I turn to?  Coffee filters!!

4.) Splatter Screen. Need a splatter-screen for reheating a bowl of something in the microwave?  Coffee filters to the rescue!

5.) Clean your computer screen.  I do this one pretty often!

6.) Cookie Tin Liner. When I filled round tins with homemade cookies and candies this Christmas – flattened coffee filters separated the layers of cookies.  They fit perfectly in a cookie tin!

7.) PopsicleDrip-Guard.  Poke your popscicle stick right through the middle of the coffee filter so keep the kids hands from getting messy!

8.) China Storage.  Keep your pretty dishes from getting scratched by layering flattened coffee filters between the plates.

9.) Flattering Flash!  Soften the light from your camera flash by putting a filter over the flash.  This is great for close-ups.

10.)  Clean Windows & Mirrors. Coffee filters leave no lint!

Campaign Cake Balls! (Recipe and Campaign Poster)

Here is the batch with sprinkles – I made a second batch where I cut up leftover Christmas candy into tiny chunks and sprinkled those all over the tops.

My son James is running for Class President. (Excited mom squeal!)  His elementary school just adopted the idea of a student council – and he is 100% on board with ideas + enthusiasm!  In fact – he asked me to make my very first batch of campaign bribery treats this weekend (which I was more than happy to do) and we landed on Cake Balls.  You just can’t lose with those :)

The sqiggles all over the edges are because – “Girls in my class like fancy stuff, mom.”

Check out his campaign poster – which accompanied by his brilliant ideas – will surely help him go far :)   Here’s my favorite idea of his:
Put up “Bully Boxes” around the school.  These will be locked boxes with a slot big enough for kids to slide in a slip of paper, hung in places like the bathrooms or other public areas, for kids to report being bullied – or seeing others getting bullied.  This is so that (and I quote) “Kids don’t have to be scared of being snitches anymore.  Cause nobody likes a snitch, mom.”

Now back to chocolate!  Here is my recipe – stolen from Kasey & Kelly who taught me a couple years ago – which is remarkably simple.

Cake Balls:
Bake a cake.  Crumble it up and stir it up in a big bowl with a can of frosting.  Form into balls with scooper (Scoop it and push it hard against the side of the bowl so that it’s really packed in there).  Melt chocolate chips or candy melts and spoon over the top of each ball.  I always end up having to sort of gingerly spread the chocolate in a swirly pattern – because I never have the better-melting candy melts.  Chocolate chips just don’t get all that drippy, ya know?  Top with sprinkles, crunched up candy bars or pretzels, coconut, nuts or other yumminess while still warm.  Serve in cupcake holders or mini-cupcake holders.

Tons of flavor combos work well together, but here are some that are on my short list:

Strawberry cake + Strawberry Icing + Chocolate Topping (Like a chocolate covered strawberry!)
Strawberry Cake + Cream Cheese Icing + Any Kind of Topping
Carrot Cake + Cream Cheese Icing + White Chocolate coating + Nuts
Chocolate + Chocolate + Chocolate (If it ain’t broke, don’t fix it)

Valentine X-O-X-O Cupcakes!

Here’s a super cute – AND EASY – idea I saw for Valentine Cupcakes over at Martha Stewart!  I bet lots of us have red m&m’s, skittles or some other candies left over in our Christmas stash – but if you don’t  – then you can get in on the $1 M&M bags at CVS or Walgreens this week!

To this end, I am FORCING my children to eat all the green Sixlets from some clearance candy we got at the Dollar General this week.  They are very broken up about it :)
